The saffron
Whole saffron threads from Khorasan, selected again by the house and kept by lot so their origin and record remain attached to them.
From Khorasan, Iran — a region with a long history of saffron cultivation. Maison Piruz is a French house; the material keeps its Persian origin.
After harvest, the threads pass through a second selection by hand. The house keeps the material that meets its selection and sets the rest aside.
In the kitchen
Keep the threads dry, sealed, and protected from direct light and heat. Close the vessel carefully after each use.
A small amount is usually enough. The threads can be gently infused before they meet the dish, allowing colour, aroma and flavour to unfold gradually.
It depends on the preparation. Keeping the threads whole preserves the material until the moment of use; for some preparations, they may be gently crushed just before infusion.
Lots and traceability
A defined batch kept separate and identified by its own number and record.
Use the number printed on the Maison Piruz packaging on the Trace a Lot page. When the registry is active for that lot, its available record will appear there.
Because harvests are not anonymous. Keeping lots separate allows the house to preserve the connection between the material and the information that belongs to it.
