What the field gives, the table judges.

THE ATELIER
A table, linen, and light
The selection table is the house's true address. Every lot the maison receives crosses it in its entirety — no thread enters a jar unexamined, and no jar leaves the room unsigned.
The tools are deliberately few: a pair of brass tweezers, a small precision scale, a length of raw linen, and eyes trained by the previous harvest. The rest is time — an afternoon set aside for one tray, and then another.

THE CUT
Where crimson becomes grade
Each stigma is trimmed precisely where its crimson turns to yellow. Cut low, and the pale style's dead weight remains in the jar — bulk without perfume. Cut well, and what remains is Negin — the gem: whole, deep-red, fully trimmed.
The finest cut of all is Super Negin — long, unbroken, entirely crimson, entirely free of the style. Grade is not a marketing tier; it is the record of a gesture. The house buys, and the house pours, only Super Negin.

THE SECOND SELECTION
Grade I, judged again
The house buys only Grade I Super Negin. And then, at its own table, the house selects again — thread by thread, by hand — from what has already passed a first judgment in Khorasan.
What is set aside would be sold proudly elsewhere. What remains is what fills the jars of Maison Piruz — the standard made visible not by what enters, but by what is refused.

We do not grade our own work unexamined. The laboratory reads what the table has chosen — and we publish what it finds.

THE SEAL
Glass, darkness, and a number
The chosen threads are sealed the same day: glass against air, darkness against light. Nothing is added, nothing is powdered, nothing is blended — the flower's own work is the entire contents of the jar.
A lot number is applied to the base, binding the jar to its harvest and to its independent analysis. The object the visitor holds is the day at the table, closed and dated.
