The name of the house is Persian. It is written the way it has always been written, and it is pronounced the way it has always been pronounced — Pi-ruz, with the accent on the second syllable, the way the villages in the north-east of Iran have said it for as long as there has been a name for a victorious return.
We were asked, in the first year, whether it would be simpler to change the spelling for the French market. It would have been simpler. It would also have been the first small lie of the house, and a house that begins in a small lie does not end in serious spice. We kept the word. We kept its accent. We keep, in the atelier and in the office and on every jar, the sound the field itself made when it named the harvest.
