THE PAPERS

Traceability

Every jar of this format is drawn from a single harvest lot, and its lot number is printed on the enclosed card. The verified lot record is published in the registry with the selection it belongs to.

Saffron threads infusing in warm water, a golden plume blooming from the strands.

Chapter IV — Ritual

THE GESTURE

The kitchen goes quiet.

A small cup of warm water. A few threads, counted on one hand. Set aside. Ten minutes of stillness.

Colour arrives first. Then, unhurried, the perfume — hay, honey, a distant note of the sea. By the tenth minute the cup no longer holds an ingredient. It holds a preparation.

Pour it whole into the pan, threads and infusion together. The rice, the broth, the plate carried to the table — each will remember this pause.
